
This is what happens when you mean to make caramelized apples but forget to check the pot for 20 minutes: delicious homemade applesauce. In the end I learned to make something new which didn’t end in disaster, whew!
Homemade Applesauce
(makes about 4 cups)

INGREDIENTS
- 5 large apples (Granny Smith recommended)
- 1 cup apple juice
- 5 Tbs sugar
- Pinch of salt
- 3 cinnamon sticks
- 1 tsp fresh lemon juice

DIRECTIONS
- Peel, core, and slice the apples.
- Add the apple slices to a Dutch oven with the apple juice, sugar, salt, lemon juice and cinnamon sticks.
- Bring the mixture to a simmer over medium-heat. Cover the pot and continue to cook at a simmer until the apples begin to break down, about 20 minutes.
- Stir occasionally with a wooden spoon, mashing the apples. Remove the cinnamon sticks. If desired, transfer to a food processor and puree until a smooth consistency is reached, adding water if necessary to thin it out. I simply mashed the apples with the wooden spoon for a more chunky texture…(add water as needed).
