Chocolate Eclair Cake

Tonight is our Medical School Winter Formal (or med school prom as it is also known)…….I’m not sure what to expect!

But anyways John and I are meeting with some awesome people before “the prom” to have a potluck and, I guess, get into the spirit of the celebration, which will probably end up being the most exciting part of the night. I’m bringing Chocolate Eclair Cake because it takes 30 minutes to make and yet it looks and tastes like it is a weekend affair.

INGREDIENTS

  • 2 boxes of graham crackers (one honey, one chocolate) – not all will be used
  • 1 large box of vanilla instant pudding (5.1 oz)
  • 12 oz container of cool whip
  • 2 cups milk
  • 1 container of chocholate frosting (I used Betty Crocker)
  • 12 oz heavy cream (one small container – chilled)
  • ½ cup of granulated sugar
  • 1 tbs vanilla extract
  • ½ cup chocolate shavings
  • Chocolate syrup to serve (optional)

DIRECTIONS

  1. Line the bottom of a 9×13 inch pan with the honey graham crackers (you may have to break some to get them to cover the entire surface).
  2. In a medium size bowl combine the pudding, milk and cool whip and beat with the mixer for 2 minutes. Spread the mixture over the graham crackers.
  3. Cover with a new layer of chocolate graham crackers (I actually doubled this layer for more chocolatey goodness and you are wellcome to do the same).
  4. Remove aluminum top from the frosting container and place in the microwave for 45-60 seconds, until it becomes melted and thin.
  5. Pour over the chocolate graham cracker layer and smooth out. Cover the frosting layer with another layer of honey graham crackers. In a large mixing bowl beat the heavy cream at high speed until stiff peaks are form (about 4 minutes), then add the sugar and vanilla extract and beat for one more minute, making sure to mix well.
  6. Add the cream over the honey graham cracker layer and smooth out. Sprinkle with the chocolate shavings and refrigerate overnight (this allows the crackers to absorb the moisture from the cream and chocolate frosting and acquire a cakey consistency).
  7. When ready to serve pour the chocolate syrup over the cake and enjoy!
